Peanut Butter Cookies

These soft, chewy peanut butter cookies are simple to make and packed with rich peanut butter flavor.

Ingredients

  • 1 cup creamy peanut butter
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Instructions

  1. Preheat oven to 350°F.
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, cream together peanut butter, butter, granulated sugar, and brown sugar until smooth.
  4. Beat in egg and vanilla extract.
  5. In a separate bowl, whisk together flour, baking soda, and salt.
  6. Gradually add dry ingredients to the peanut butter mixture and mix until combined.
  7. Roll dough into 1-inch balls and place 2 inches apart on the prepared baking sheet.
  8. Use a fork to gently press a crisscross pattern into the tops of the cookies.
  9. Bake for 10–12 minutes, until the edges are lightly golden.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
